Healthy Dry Fruit Barfi (Panjiri)


This super amazing tasty dry fruit barfi is a treat to health as well as taste buds. Dry fruits gives you instant energy supply during busy days. These provide nourishment during chilling winters. So this recipe is a must to try this winters:

Ingredients:

  1.  Grated coconut- 200 grams
  2. Poppy seeds(post k dane in hindi)- 100 grams
  3. Fox Nuts(Makhane)- 100 grams
  4. Edible gum(gond) - 100 grams
  5. Dry raisins(Kishmish) - 100 grams
  6. Almonds- 250 grams
  7. Dry Dates( Chuhara) - 100 grams
  8. Kamarkas- 50 grma
  9. Watermelon seeds(Magaj) - 50 grams
  10. Ghee- 250 grams
  11. Dried whole milk (khoya) - 500 grams
  12. Sugar- 500 grams
  13. Water- as per requirement
First of all roast watermelon seeds and poppy seeds. Keep them aside. Now heat ghee in a sauce pan and add all dry fruits except grated coconut, raisins, watermelon seeds and poppy seeds. Fry and let it cool down. Now coarsely grind all fried dry fruits. When we fry dry fruits its aroma and taste gets instantly enhanced and give the recipe a very rich taste.
Now heat khoya in a separate vessel. Once it starts releasing oil remove it from the flame and let it cool. All the ingredients are now ready to put together.
Grease a plate with oil and keep it aside.
Now put pan n heat and add 250 ml of water, once water starts boiling add sugar to it. Stir frequently. Check the consistency of the syrup. Once the syrups starts getting thick add all other ingredients and mix them well quickly.
Now pour this mixture in greased plate. Let it cool for three to four hours. Cut it in diamond shape.

Note: Remember that kamarkas needs to washed before using, as it may contain dirt particles.
